Introduction

You and your friends have just moved to Maine and want to start a business.  The local people tell you that lobsters are the best business to get into.  Recently there has been a rise in lobster fishing there.  This sounds great!  You have had lobster and love it but realize that you do not know very much about lobsters or where they come from.  How do you fish for lobsters and decide which to sell?  Are there differences between lobsters that you would have to put on the menu?
